Chicken yakitori skewers Recipe

Skewers of chicken breast marinated in soy, sake and miso paste, cooked on a chargrill.

Pour people
  • Chicken breast(s) (150g) - skinless : 3 whole
  • Soy sauce : 200 ml
  • Mirin : 50 ml
  • Sake : 50 ml
  • Miso : 50 g
  • Shiitake mushroom(s) : 6 whole
  • White sesame seeds : 20 g
  • ETAPE 1

    Cut the chicken into 1 centimeter pieces. Mix together the soy, mirin, miso and sake.
    Marinate the chicken in this for at least 1 hour and then thread the chicken pieces onto skewers.

    Remove the stalk from the mushroom and place this onto the end of the skewer.

  • ETAPE 2

    Preheat a grill until it is very hot. Cook the skewers on the grill turning them often.
    As they cook, brush any remaining marinade over them. Cook for around 5 minutes or until the chicken is cooked through.

  • ETAPE 3

    Finish by sprinkling the sesame seeds over the skewers.

«Yakitori usually refers to skewered chicken but try using asparagus and tofu with the same marinade.»
