Hummous Recipe

A classic hummous made from chick peas flavoured with tahini, lemon and garlic

  • Chick pea(s) : 400 g
  • Sesame tahini : 100 g
  • Lemon(s) : 1 whole
  • Garlic clove(s) : 2 whole
  • Olive oil : 100 ml
  • Maldon salt : 3 pinch(es)
  • Freshly ground black pepper : 3 Turn


  • ETAPE 1

    Drain the tin of chick peas in a sieve and rinse under cold running water.

  • ETAPE 2

    Puree the garlic. Zest and juice the lemon.

  • ETAPE 3

    Add the chick peas to a blender along with the garlic puree, tahini with half of the lemon juice and zest. Blend while slowly adding adding the olive oil. Finish to taste with salt, pepper and lemon juice.

  • ETAPE 4

    Serve as a dip with some fresh flatbreads.

Chef's tip

«Try adding nuts to the mix for added texture. Walnuts are delicious lightly toasted and crushed into the hummous.»
