Line a tray with a double lining of cling film. Scrape the seeds from the vanilla pod.
Place all of the ingredients in a saucepan and bring to the boil then turn down and allow to simmer for 10-15 minutes until it reaches 118 degrees. A good test if you don't have a sugar thermometer is to drop a small amount into ice water. If it turns into a soft ball its ready.
Remove from the heat and add the vanilla seeds and beat using a spatula for 10 minutes until the mixture thickens and is almost completely cool. This will also help it become smooth and glossy.
Transfer to your lined tray and place in the fridge to allow to cool before removing and cutting into squares.
