A combination of fresh herbs, spicy ginger and green chilli, balanced with fresh lime juice
Gently toast the cumin seeds and crush with a pestle and mortar.
Peel the ginger and finely slice. Zest and juice the lime.
Pick the fenugreek leaves.finely slice the coriander including the stalk.
Finely slice the chilli.
Place all the ingredients in a food processor and blend until evenly chopped.
« For a milder spiced relish, remove the chilli seeds before blending. The peanut oil can be replaced or left out for a fresher tasting relish.»
