Vegetarian sausage Recipe

The exception to the rule. These home-made Veggie sausages are THE healthy option and is filled with many varieties of vegetables that can be found in the fridge. A great alternative.

Pour people
  • Onion(s) : 2 whole
  • Garlic clove(s) : 4 whole
  • White beans : 600 g
  • Soy sauce : 4 Tbsp
  • Fresh tomato puree : 20 g
  • Smoked paprika : 40 g
  • Ground coriander : 20 g
  • Dark mustard seed(s) : 30 g
  • Celery salt : 30 g
  • Mace : 30 g
  • Rolled oats : 40 g
  • Linseeds : 15 g
  • Peanut oil : 20 cl


  • ETAPE 1

    Peel and dice onion and garlic. Rinse white beans and crush in Mortal & pestle. Sweat off the Onions and add the garlic after. Add all other ingredients to the pan and cook for 5 min. Remove from heat and add the mix in a bowl to cool.

  • ETAPE 2

    Cool for 10 min. and get a sheet of baking paper ready. Add mix on baking paper lengthways and roll over tight by pushing baking paper in sausage form. Cut in 5cm sausage sizes and add on tray and leave in fridge for 10 min.

  • ETAPE 3

    Heat a frying pan with peanut oil and brown off individual sausages.

Chef's tip

«Make it a bit spicy by adding some chilli. Different types of beans can be used instead of white beans, i.e pinto beans. Instead of baking paper, you can use cling film and blanch layers of leek and refresh it to wrap around your set mix.»
