finely grate the coconut.
mix together the rice flour, spices, coconut, curry leaves and salt.
Add about 3/4 of the water and mix until it comes together as a dough, adding more water as necessary.
Using the extra rice flour to coat your hands and bench,divide the dough, knead and roll into small balls.
Allow to rest for 10 minutes.
Roll into 1mm thick discs
Heat a large frying pan and coat the bottom with oil.
fry the discs off until golden brown (approx 2-3 minutes)
Turn over to the other side and repeat.
Serve warm
