Chilli jam Recipe

A versatile sweet, spicy condiment. Adjust the herbs and spices to get more of a distinctive Asian flavor

Ingredients
Pour people
  • For the pastry
  • 1/2 french baguette precooked : 3 whole
  • Unsalted butter : 100 g
  • For the sauce
  • Cherry tomatoes on the vine : 200 g
  • Garlic clove(s) : 6 whole
  • Red chilli(s) : 4 whole
  • Fresh ginger : 30 g
  • Lime leave(s) : 6 whole
  • Rice wine vinegar : 20 ml
  • Star anise : 2 whole
  • Banana shallot(s) : 3 whole
  • Water : 100 ml
  • Caster sugar : 100 g
Method
  • 1. FOR THE SAUCE

    Peel and slice the shallot, ginger and garlic finely across the grain.
    Remove the stalk and slice the chilli.
    Quarter the cherry tomatoes
    Add all of the ingredients to a saucepan with the water.
    Bring to the boil, turn down to a simmer and reduce to syrup consistency.
    remove the lime leaves and star anise and puree with a stick blender.



  • 2. FOR THE PASTRY

    Cut the bread lengthwise, and butter liberally whilst warm.
    Serve with chili jam and your favorite grilled Sausage.

Chef's tip

«For a slightly different but more presentable chutney, finely dice the vegetables and half the cherry tomatoes. Add the cherry tomatoes to the syrup after it has been reduced, and cook until tender.»
