Chinese New Year cake- Nian Gao Recipe

Ingredients for people

  • Rice flour : 400 g
  • Dark soft brown sugar : 150 g
  • Semi-skimmed milk : 30 ml
  • Water : 275 ml
  • Green tea powder : 50 g
  • Vanilla extract : 10 drop
  • Frying oil : 20 ml

    Bring the water up to the boil, add the sugar and stir until its dissolved, allow to cool. Put the flour and tea powder into a large bowl, make a well in the center, add the milk and vanilla and then add the sugar water a little at a time, stir together to form a ball. It should be a smooth mix with no lumps. Use a cake tin or steamer lined with baking paper, place this into another larger pan and fill the outside with water to create a Bain Marie or water bath, cover with a lid and simmer or steam for 1 and a half hours. It will take less time if done in a steamer.
    Turn out onto a plate and allow to cool before serving.

A sticky rice cake flavoured with green tea. Translated this means year cake and is considered a good omen for the coming year.
