A classic Caribbean recipe of prawns, spices and hot chilli peppers!
De-vein the prawns,
Peel the onion and finely dice and garlic,
Chop the chilli into fine dice, keep the seeds in, its supposed to be fiery!
Cut the peppers into strips roughly the same size as the prawns.
Heat a large frying pan, add the oil and when smoking add the peppers, cook for a minute then add the prawns and chilli's. Cook till they start to turn pink then add the onion,garlic, paprika, allspice and salt, cook for another minute then add the vinegar, stir well and remove from the heat,squeeze the juice of 1 lime over the top and cut the rest into segments to serve alongside.
