King prawns, cauliflower puree, crisp pancetta and a garlic and parsley sauce Recipe

Ingredients for people

  • Cauliflower : 0.5 whole
  • Semi-skimmed milk : 150 ml
  • King prawn(s) without shell : 24 whole
  • Pancetta slice(s) : 6 whole
  • White truffle oil : 5 ml
  • Unsalted butter : 30 g
  • Fine salt : 4 pinch(es)
  • Fine ground white pepper : 4 g
  • Lemon(s) : 1 whole
  • Pea shoot(s) : 1 bunch

  • For the sauce
  • Flat leaf parsley : 1 bunch
  • Garlic clove(s) : 3 whole
  • Olive oil : 150 ml
  • 1To make the cauliflower puree

    Place the milk and cauliflower in a pan with a good pinch of salt and bring to the boil. Simmer until the cauliflower is tender. Drain the cauliflower from the milk making sure you do not throw away the milk. Puree the cooked cauliflower in a food processor until smooth and add some of the milk if required. Season with salt and pepper.

  • 2To make the pancetta crisps

    Preheat the ovn to 180'c.
    Place the slices of pancetta between two sheets of baking paper and then between two baking trays. Bake in the oven at 180 degrees for 6 - 7 minutes, until golden brown. The pancetta will crisp as it cools.

  • 3For the sauce

    Peel the garlic and add place in a large pan of water, bring to the boil. Cook the garlic for a few minutes, blanch the parsley by plunging it into the boiling water for a few seconds and the refresh in cold water. Remove the garlic.

    Add the oil, parsley and garlic to a food processor and blitz till smooth, drain through a fine muslin cloth or a J cloth.

  • 4To cook the prawns

    Heat up a frying pan until very hot. Season the prawns with salt and pepper and then fry in a drizzle of sunflower oil. Cook on one side for two minutes until they turn pink and then finish cooking by turning them over and cooking for another minute. Squeeze over the juice of half a lemon, truffle oil and add a knob of butter to the pan and roll the prawns around in this sauce.

    To assemble your dish, place three dollops of cauliflower puree on your plate, put the prawns on top and drizzle on the juices from the pan. Finish the plate with a crisp strip of pancetta and some of the olive oil sauce.
