Rosewater marshmallow knots Recipe

Rosewater scented marshmallows, with a very literal twist! Great for impressing friends or children at any occasion.

  • Water : 94 ml
  • Glucose syrup : 42 g
  • Caster sugar : 440 g
  • Egg white(s) : 55 g
  • Gelatine leave(s) 2g : 12 whole
  • Rose water : 40 drop
  • Pink food colour powder : 2 g
  • To line the mould(s)
  • Icing sugar : 150 g
  • Corn starch : 150 g


  • ETAPE 1

    Soak the gelatine leaves in ice-cold water until softened.

  • ETAPE 2

    Sift the icing sugar and corn starch together. Generously dust a baking tray with the icing sugar mix, set aside. Keep the rest of the dusting mix for later.

  • ETAPE 3

    Place the water, glucose syrup and caster sugar in a saucepan along with a candy thermometer. Bring the syrup up to the boil until it reaches 121'C.

  • ETAPE 4

    Meanwhile, drain the gelatine leaves, and squeeze out any excess water. Gently heat the gelatine with the rosewater to dissolve.

  • ETAPE 5

    In a mixing bowl, beat the egg white at a low speed to obtain a frothy mixture.

  • ETAPE 6

    When the syrup reaches 121'C, continue beating the egg whites at high speed all the while pouring the hot sugar in a thin stream. Add the melted gelatine next, and continue beating the meringue until tripled in volume and nearly cooled down to room temperature.

  • ETAPE 7

    Add the pink food coloring to the mixture, and fold in to create a rippled effect.

  • ETAPE 8

    Pour the meringue into piping bags, tie and snip off the tip to approximately 1cm.

  • ETAPE 9

    Pipe in long thin lines across the tray, taking care not to let the lines touch.
    Dust the top with th remaining cornflour and icing sugar.
    Chill the marshmallow in the refrigerator for at least 30 minutes.

  • ETAPE 10

    When the marshmallow is set, cut into segments,tie into knots and store in the icing sugar until needed. Shake off any excess dust before serving.
