In a deep saucpan, heat the oil until it reaches 175'C.
Beat the eggs with a whisk.
Place the plain flour on a tray or plate.
Place the panko breadcrumbs on a tray or plate.
Cut the bananas in half.
Dredge the bananas in the flour to coat.
Dip the bananas in the beaten eggs.
Finally cover the bananas in breadcrumbs.
Fry the bananas in batches until golden brown, and drain on clean paper towels.
Serve immediately.
