In a clean bowl, whisk the egg yolks, mustard, salt and drizzle the oil until it becomes a thick consistency then juice the lemon.
On a clean chopping board finely slice the white cabbage, the spring onion, the radish and the grate the carrot. Set aside .
In a large bowl add the cabbage, carrot, spring onions, radishes, lime juice, cumin, cayenne pepper salt, pepper, the mayonnaise and mix through.
Chill at least an hour before serving.
