Texan style coleslaw Recipe

  • White cabbage(s) : 1 whole
  • Carrot(s) : 2 whole
  • Spring onion(s) : 1 bunch
  • Pink radish(es) : 1 g
  • Lime(s) : 1 whole
  • Ground cumin : 1 Tsp
  • Cayenne pepper : 1 Tsp
  • Maldon salt : 5 pinch(es)
  • Freshly ground black pepper : 5 Turn

  • Egg yolk(s) : 2 whole
  • Dijon mustarde : 5 g
  • Sunflower oil : 300 ml
  • Maldon salt : 4 pinch(es)
  • Lemon(s) : 1 whole
Method
  • 1. FOR THE TEXAN COLESLAW

    In a clean bowl, whisk the egg yolks, mustard, salt and drizzle the oil until it becomes a thick consistency then juice the lemon.

    On a clean chopping board finely slice the white cabbage, the spring onion, the radish and the grate the carrot. Set aside .

    In a large bowl add the cabbage, carrot, spring onions, radishes, lime juice, cumin, cayenne pepper salt, pepper, the mayonnaise and mix through.

  • 2. TO SERVE

    Chill at least an hour before serving.
