A luxurious creamy potato salad with smoked bacon bacon, hard boiled eggs and broccoli.
Place the potatoes in a saucepan with lightly salted water, bring to the boil, turn down the heat to simmer and cook until tender for about 20 minutes.
Drain the potatoes in a colander and leave to cool.
Slice the bacon in fine strips and set a side.
Heat a dry frying pan to a high heat, add the bacon and cook until crispy.
Place your eggs in a pot of water, bring to the boil and cook for 6 min from boiling.
Cool the eggs, remove the shell and chop coarsley.
Peel and dice the shallot. Pick the Florettes of broccoli.
Slice the dill .
Bring a pot of salted water to the boil.
Add the broccoli and cook until tender about 3min then chill in cold water ,drain and set aside .
Grate the cheddar using a grater and set a side
In a large bowl, mix the potatoes, chopped bacon, hard-boiled eggs, broccoli, Cheddar cheese, sour cream, dill , salt and pepper until thoroughly combined, and serve.
