Suya (spicy beef kebab) Recipe

Suya is a traditional spicy beef kebab from Central Africa and a firm favourite in Nigerian cuisine.

  • Rump steak (200g) : 0.6 kg
  • Cayenne pepper : 1 Tsp
  • Smoked paprika : 2 Tsp
  • Onion powder : 2 Tsp
  • Fine ground white pepper : 3 pinch(es)
  • Peanut(s) : 80 g
  • Maldon salt : 5 pinch(es)
  • Sunflower oil : 5 Tbsp
  • Fresh coriander : 1 bunch
  • Lime(s) : 2 whole



    If char-grilling, soak the skewers for at least 20 minutes, totally submerging them in water before cooking to prevent burns.

    Heat the oven to 200 degrees.

    Lightly oil a roasting tray to prevent the suyas from sticking.

    Finely slice the leaves and stalk of the coriander.
    Cut the lime into wedges.

    In a medium bowl mix the onion power, smoked paprika, white pepper, cayenne pepper.

    Roast the peanuts and coarsely chop in a food processor do not grind the peanuts into paste.

    Add the ground peanuts into spice mixture.

    Slice the steak into thin strips.

    Thread the steaks onto the skewers. Making sure the skewer is fully covered with slices of meat.

    Rub the steak skewer with spice mixture on both sides and season with salt.

    Place the skewers on the roasting tray drizzle the oil and cook for 12 minutes.

  • 2. TO SERVE

    Sprinkle the chopped coriander on top of the skewer and serve with the lime wedges.
