North African spiced red pepper & tomato stew with fresh coriander

  • Onion(s) : 1 whole
  • Red pepper(s) : 2 whole
  • Green pepper(s) : 1 whole
  • Garlic clove(s) : 4 whole
  • Green chilli(s) : 2 whole
  • Ras el hanout : 2 Tsp
  • Paprika : 1 g
  • Ground turmeric : 1 Tsp
  • Dark mustard seed(s) : 2 Tsp
  • Olive oil : 2 Tbsp
  • Tinned chopped tomatoes : 400 g
  • Fresh coriander : 1 bunch
Method
  • ETAPE 1

    Finely chop the onion, garlic, peppers and chillies. Heat 2 tbsp olive oil in a large saucepan and sweat the onion for 5 minutes. Add the spices and cook for 1 minute, then add the garlic, peppers and chillies. Turn the heat up high and stir fry for 5 minutes before adding the chopped tomatoes and 200ml water. Simmer for 15 minutes, stirring regularly. Add the fresh coriander and season to taste.

Chef's tip

«Crack 6 eggs in and bake in the oven for 5 minutes to turn this into a delicious breakfast. Serve with some crusty bread for mopping up the sauce!»
