Ingredients
Pour people
  • Chick pea(s) : 400 g
  • Flat leaf parsley : 0.5 bunch
  • Fresh coriander : 0.5 bunch
  • Garlic clove(s) : 2 whole
  • Ground cumin : 5 g
  • Ground coriander : 5 g
  • Onion(s) : 1 whole
  • Baking powder : 5 g
  • Chickpea flour : 100 g
  • Maldon salt : 1 pinch(es)
  • Freshly ground black pepper : 2 Turn
  • Lemon(s) : 1 whole
  • Olive oil : 30 cl
Method
  • ETAPE 1

    Preheat the oven to 190c. Peel and mince the garlic and onion. Drain the chickpeas, roughly chop the coriander, pick the leaves from the parsley and roughly chop. Zest and juice the lemon. Add all the ingredients to a food processor and blitz to a thick paste. Chill in the fridge for 10 minutes.

  • ETAPE 2

    Form the chickpea dough into patties and bake in the oven for 15 minutes and firm and cracked on the outside.

Chef's tip

«You can adjust the consistency of the dough by adding a few teaspoons of water or more chickpea flour: the dough needs to be firm enough to mould.»
