Rum flambe, banana puree Recipe

A great alternative to a dollop of cream or ice cream.

  • Banana(s) : 2 whole
  • Caster sugar : 50 g
  • Dark rum : 100 ml
  • Unsalted butter : 70 g


  • ETAPE 1

    Melt the sugar in a saucepan to make a caramel, then add the butter and mix.
    Add the bananas and allow them to caramelise a little. Add a little water to stop burning if needed.
    Add the rum and light on fire.
    When the fire goes out, transfer the mix to a blender and puree.

  • ETAPE 2

    Serve warm or chilled
