Corn tortilla dough Recipe

A recipe for a dough made from maize flour. This can be used for tortillas and tacos.

Ingredients

Pour people
  • Corn meal : 500 g
  • Water : 480 ml
  • Fine salt : 10 g

Method

  • ETAPE 1

    Warm the water in a pan, not quite to boil, but hot.

  • ETAPE 2

    In a bowl, mix the flour, salt and hot water with a wooden spoon until a dough begins to form.
    once the bowl becomes clean, take the mix out and knead a little, just to bring it together.

  • ETAPE 3

    Roll into 50g balls and place in a tray, covered with cling film for about 30 min.

  • ETAPE 4

    Heat a pan to a medium high heat.

  • ETAPE 5

    Using a tortilla press, flatten your dough and cook in a dry pan for about 45 seconds, until it starts to set and colour.
    Flip the tortilla over.
    As the other side cooks, it should start to bubble up. Gently press the side of the bubble to move the air through the tortilla, cooking it faster and keeping a nice airy centre.

Chef's tip

«Be sure to use Masa Harina flour, not Corn Flour. Even though that is the direct translation, they are two very different products.»
