Bacalhau à Beneditine (Portuguese dish of cod and mash potatoes) Recipe

Portuguese dish that combine salted cod and mash potatoes, perfect starter!

Ingredients

Pour people
  • Dried salt cod : 500 g
  • Olive oil : 20 cl
  • Semi-skimmed milk : 500 cl
  • Garlic clove(s) : 2 whole
  • Desiree potato(es) : 500 g
  • Chive(s) : 1 bunch
  • Banana shallot(s) : 1 whole
  • Unsalted butter : 30 g

Method

  • 1. PART ONE OF THE RECIPE

    Soak the fish in water , ideally overnight but minimum for 2 hours changing the water every 10 min for the first hour and a half and keeping the fish down running water for the last 30min.

    Pat dry the fish , cook the fish in the milk starting from cold and bringing slowly to a nice simmer ,when cooked remove the fish from the milk and shred it with the help of two forks , make sure to discard any bones or skin.

    In a pestle an mortar or using a knife make a paste with the garlic

    Finely dice the shallot

    Boil the potatoes until soft and make a puree with them.

    Finely chop the chive.



  • 2. PART TWO OF THE RECIPE

    Preheat the oven at 200C

    In a pan add the oil and cook the onion on a medium heat until translucent, add the fish and garlic and cook for a further 3 min stirring continuously , add the butter, 50ml of the milk and mash potatoes .Season to taste

    Transfer to individual oven dishes and cook until nice caramelised colour on the top.

    Finish the dish with the chopped chives.
