Vegan and Gluten Free Chocolate Brownie Recipe

Ingredients

Pour people
  • Ground Flaxseeds : 14 g
  • Water : 150 ml
  • Coconut oil : 110 ml
  • Coconut sugar : 100 g
  • Maple syrup : 60 ml
  • Vanilla Paste : 1 tea spoon
  • Baking powder : 0.25 Tsp
  • Gluten free flour : 120 g
  • Ground almonds : 30 g
  • Pecan nut(s) : 30 g
  • Dark chocolate : 50 g
  • Unsweetened cocoa powder : 50 g
  • Almond milk : 50 ml

Method

  • ETAPE 1

    Set oven to 180 degrees Celsius

  • ETAPE 2

    Line a baking tray with lightly oiled parchment paper

  • ETAPE 3

    Mix ground flax seed and water and allow to stand for 5 mins. You are looking for the consistency of eggs (flax seed eggs) so a slight adjustment of water may be required.

    large mixing bowl add coconut oil, coconut sugar, maple syrup and vanilla extract, almond milk. Whisk thoroughly to combine and start dissolving the coconut sugar into the mix.

    Add flax seed eggs and whisk once more until combined. Then add baking powder, sea salt, and cocoa powder and whisk.
    Add gluten-free flour and ground almonds and fold with a spatula until just mixed. Add in the vegan chocolate chips and pecan nuts.

    Add the brownie mix to the prepared baking dish and spread into an even layer.

  • ETAPE 7

    Bake for 17-20 minutes, or until the edges appear dry and slightly fluffy and the center is just set.

    Remove from oven and let cool in the pan for at least 10 minutes.
