  • Part one of the recipe
  • Halloumi cheese : 300 g
  • Flat leaf parsley : 1 bunch
  • Part two of the recipe
  • Chick pea(s) : 400 g
  • Sesame tahini : 20 g
  • Olive oil : 40 cl
  • Maldon salt : 3 pinch(es)
  • Lemon(s) : 1 whole
  • Garlic clove(s) : 1 whole
  • Smoked paprika : 1 Tsp
  • Part three of the recipe
  • Greek yogurt : 200 g
  • Pomegranate molasses : 50 ml
  • Ciabatta : 1 whole

Method

  • 1. PART ONE OF THE RECIPE

    Cut the halloumi cheese into 1/2 cm cubes.

    Chop the parsley.

    To cook the cheese, heat a frying pan until hot and add a splash of oil. Add the cheese cubes until golden brown on both sides.

  • 2. PART TWO OF THE RECIPE

    Rinse the chick peas.

    Juice the lemon.

    Peel and crush the garlic clove.


    Place the chickpeas, tahini paste, garlic clove,lemon juiceand oil in the bowl of a food processor and blend until relatively smooth.

    Taste for seasoning, add some water if necessary for a creamier consistency .

  • 3. PART THREE OF THE RECIPE

    Preheat the oven to 180C

    Mix the yogurt and molasses together .

    Cut the ciabatta or baguette into 2cm slices, transfer to the oven until brown colour

  • 4. TO SERVE

    Add some hummus on the toasted bread , top with the halloumi and liberally drizzle the yogurt sauce on top. Finish the dish with some parsley and smoked paprika for colour.
