  • Parma ham slice(s) : 12 whole
  • Peach(s) : 3 g
  • Green asparagus : 18 whole
  • Lamb's lettuce : 400 g
  • Red onion(s) : 1 whole
  • Caster sugar : 20 g
  • Feta : 200 g
  • Part two of the recipe
  • Garlic clove(s) : 1 whole
  • Olive oil : 50 ml
  • Balsamic vinegar : 10 Tbsp
  • Lemon(s) : 1 whole
  • Basil : 1 bunch

Method

  • 1. PART ONE OF THE RECIPE

    Preheat the oven to 200C

    Finely slice the onion

    Segment the peaches, remove the hard bottom part of the asparagus.

    Wash the salad and crumble the feta cheese

    Tear the parma ham slices into small pieces and cook in the oven until crispy.

    In a grilled pan cook the asparagus until soft .

    Place the peaches in a really hot pan with a splash of cooking oil and saute until they start to break down a little at this stage add the onion and sugar and keep on cooking on a high heat until caramelised.

  • 2. PART TWO OF THE RECIPE

    Finely chop the basil.

    Juice the lemon.

    In a pestle and mortar make a paste with the garlic and a pinch of salt ,start adding the chopped basil slowly to keep on having a paste ,mix the vinegar in and gradually add the oil , finish the dressing with lemon juice to taste

  • 3. TO SERVE

    In a bowl mix the lamb lettuce,feta,peaches and onion with the dressing and toast together

    Place 3 asparagus per plate in triangle shape , put the salad mix in the middle and garnish with the parma ham crisps
