Fillet of pork with a honey and soy sauce glaze served with braised leeks Recipe

Ingredients for people

  • Pork tenderloin(s) : 3 whole
  • Leek(s) : 3 whole
  • Button mushroom(s) : 200 g
  • Onion(s) : 2 whole
  • Fresh coriander : 0.25 bunch
  • Soy sauce : 5 ml
  • Honey : 50 g
  • Chinese 5 spices : 3 g
  • Olive oil : 2 ml
  • Fine salt : 6 pinch(es)
  • Freshly ground black pepper : 6 Turn
Method

    Peel and finely dice the onions. Wash the leeks and chop into pieces or strips. Peel and quarter the mushrooms.

    Heat a large cooking pot or sauce pan and add olive oil. Add the onions and a pinch of salt and caramelise the onions for 3 minutes. Add the leeks and adjust the seasoning. Cook for 4 minutes then add the mushrooms. Adjust the seasoning and cook for 1 minute. Set aside and keep warm.

    Heat a frying pan and add a little olive oil. Sear the pork, turning over once coloured. Add the honey, a small cup of water and the soy sauce. Reduce until syrupy then add the 5 spices. Spoon the glaze over the pork regularly until cooked.

    Serve the pork alongside the braised leeks and mushrooms. Sprinkle over the coriander to finish.

Chef's tip

«Add some mange-tout or carrot to your vegetables for an extra splash of colour. Try serving with a little mustard on the side to really bring out the flavours.»
