Pork fillets caramelised in a honey and soy sauce glaze served with braised leeks and mushrooms.
Peel and finely dice the onions. Wash the leeks and chop into pieces or strips. Peel and quarter the mushrooms.
Heat a large cooking pot or sauce pan and add olive oil. Add the onions and a pinch of salt and caramelise the onions for 3 minutes. Add the leeks and adjust the seasoning. Cook for 4 minutes then add the mushrooms. Adjust the seasoning and cook for 1 minute. Set aside and keep warm.
Heat a frying pan and add a little olive oil. Sear the pork, turning over once coloured. Add the honey, a small cup of water and the soy sauce. Reduce until syrupy then add the 5 spices. Spoon the glaze over the pork regularly until cooked.
Serve the pork alongside the braised leeks and mushrooms. Sprinkle over the coriander to finish.
