Normandy tartlets Recipe

Ingredients for people

  • Plain flour : 125 g
  • Apple(s) : 1 whole
  • Icing sugar : 20 g
  • Unsalted butter : 60 g
  • Caster sugar : 75 g
  • Semi-skimmed milk : 50 ml
  • Double cream : 150 ml
  • Egg yolk(s) : 2 whole
  • Whole egg(s) : 2 whole

    Preheat the oven to 210 ° C.

    Mix the butter with the icing sugar in a bowl. Add the egg yolks and the flour and mix.

    If the mixture is a little dry, add up to 50ml of water or milk according to the texture. Mix very briefly.

    Set aside for 30 minutes.

    Roll out the pastry and use a pastry cutter to cut rounds of a 5cm diameter.

    Place the rounds in the base of silicone moulds and press them down firmly.

    Bake in the oven for 10 minutes. Once cooked, remove from the oven and set aside.

    Mix the 2 whole eggs with the caster sugar, beat for 2 minutes with an electric hand mixer and incorporate 150ml of cream.

    Pour the liquid on top of the part cooked pastry in the moulds.

    Peel the apples and cut into small cubes. Spread the apple over the tartlet and then bake in the oven for 15 minutes.

    Once cooked, remove from the oven and allow to cool before removing from the moulds.
