A rustic Italian recipe - diced chicken breast cooked with carrot, onion, celery, tomatoes and lots of basil!
Wash the celery and cut into pieces. Peel the onion and the carrots. Dice the onion and cut the carrot into pieces. Peel and finely chop the garlic. Wash and roughly chop the tomatoes. Pick and chop the basil leaves.
Heat the olive oil in a medium-sized pan and then add the chopped celery, carrot and onion.
Dice the chicken breast and add to the pan. Cook for 10 minutes before adding the garlic. Cook for a further minute before adding the tomatoes. Mix well and cook for a further ten minutes until the chicken is cooked through. Season with salt and pepper and then scatter the chopped basil over the dish.
