Berry Drizzle Recipe

A simple recipe that can be used with all sorts of desserts to add a fruity touch!

Ingredients
Pour people
  • Lemon juice : 10 ml
  • Caster sugar : to taste g
  • Strawberries : 100 g
  • Blackberries : 100 g
  • Fresh raspberries : 100 g
Method
  • ETAPE 1

    If using fresh fruit make sure it is free of any leaves or stalks.

  • ETAPE 2

    Place fresh or frozen fruit in a heavy based saucepan over a low heat, add a little sugar and bring to the boil and let it simmer.

  • ETAPE 3

    When the juices start to run after 2-3 minutes remove from the heat and allow to cool a little.

  • ETAPE 4

    Check it is sweet enough then blend in an electric blender very briefly (not essential but helps with the sieving later.)

  • ETAPE 5

    Pour into a sieve over a bowl and gently push through with a wooden spoon. Do not press hard as pips may get crushed and make the sauce taste 'woody'.

  • ETAPE 6

    Check the flavour – lemon juice can be added to sharpen it or a little more sugar to sweeten.
