Seared halibut wrapped in nori seaweed served on a bed of rice noodles with a soy lime dressing
For the dressing: zest the lime then cut in half and squeeze the into a bowl.
Add the soy sauce and the sugar to the lime juice. Mix well and add the chopped coriander leaves.
For the noodles: place in a pan of boiling water and cook until tender. Refresh in cold water to halt the cooking process and then drain.
For the halibut: Cut each fillet of halibut into 6 pieces and then wrap in nori.
Heat a frying pan and add a little cooking oil.
Place the wrapped halibut in the pan and cook for a couple of minutes on each side. Remove from the pan.
To serve: Use dinner plates or large soup bowls to serve this dish.
Make a bed on noodles and top with the halibut.
Drizzle the soy lime dressing over the dish and serve.
«To vary this dish, add a little sesame oil to the dressing or mix some lightly fried spring onions in to the noodles.»
