Vanilla is a flavouring which comes from the vanilla orchid and is used in many sweet dishes. It is grown predominantly in Madagascar, South America and the West Indies and is the second most expensive spice after saffron. Vanilla pods are cured in the sun and then dried - this process changes the green seed pods into brown, wrinkly pods which are split to extract the seeds.
